Each month on this space Sweet Chilli will provide information on how to cook Thai dishes, what sort of ingredients needed for such dishes and where to purchase those ingredients. The page is very much intended to assist those people who are interested in cooking Thai food but, never have opportunity to do so due to either lack of knowledge or do not know where to get the ingredients…



TOD MUN PLA

Spicy Thai Fish Cake (makes 15-20 patties)

  • 500g firm white fish fillets, chopped
  • ¼ teaspoon salt dissolved in 2 teaspoons water
  • 1-2 tablespoons fish sauce
  • ½ teaspoon sugar
  • 1 teaspoon red chilli flakes
  • 150g green beans, finely chopped
  • 1 tablespoon minced coriander roots
  • 2 tablespoon corn flour
  • 250ml vegetable oil
  • cucumber condiment with chilli

Once you have all the ingredients you can now cook the Tod Mun Pla. Here is the method of cooking:
  • Purée the fish and salt water to a smooth paste in a food processor
  • In a bowl, combine the fish sauce, sugar, chilli flakes, beans and coriander root.
  • Scrape the fish paste into the bowl and sprinkle with the corn flour. Beat vigorously until the mixture is smooth and glistening.
  • Heat the oil to medium-high and drop the fish mixture by tablespoonfuls into the oil, flattening each spoonful into a patty about 5cm in diameter and 1cm thick. Fry the patties until golden brown, adding oil if neccessary. Drain on paper towels. Serve hot with chilled cucumber condiment.
